The Abalone is not a true fish; it resembles a spiral shell, crawling along the reefs and seabeds by means of its fleshy foot. In ages past, it was an exclusive ingredient reserved for the nobility. Its meat is plump and rich, the flavor fresh and exquisite. Yet it is not easy to preserve, and a single piece often commands a value of several thousand coins.
