Blue Crab

"Half the shell filled with golden roe, best savored with wine; both claws cleaving snow-white flesh, an invitation to eat well." By the Song era, people had long taken to eating crabs. When Blue Crab is cooked, its color blooms a warm red, and so the elegant literati have come to call it the "Crimson Jade Disc."
