Mud Crab

Mud Crabs are the largest and most remarkable of crabs, growing to the size of a pint, and called simply "crab" by the folk of the south. It bears eight legs and two claws, shedding its shell with the tides, each shedding followed by new growth. The Youyang Miscellany records that it "can fight tigers, and its claws can cut a man down." Yet today, most who catch it do so to serve as cuisine to go with wines.
